Aam Ka Achar (Traditional Mango Pickle That Lasts for Months)

I honestly don’t remember a single summer in our home without that big glass jar of aam ka achar sunbathing on the balcony. The smell of raw mango, mustard oil, and spices together — it just makes the whole house feel like summer.


And you know what’s magical? This pickle isn’t just delicious — it’s built to last. Properly stored, it stays fresh for 6 months or more, and somehow gets even tastier with time. That’s why I love making a big batch. It’s like bottling a piece of sunshine to open on rainy days

Ingredients

  • 1 kg raw green mangoes (firm and sour)
  • 100 g mustard seeds (rai)
  • 2 tbsp fennel seeds (saunf)
  • 1 tbsp fenugreek seeds (methi)
  • 2 tbsp red chilli powder
  • 1 tsp turmeric powder
  • 200 ml mustard oil (sarson ka tel)
  • 2–3 tbsp salt (or to taste)

How I Make It:

  1. Wash and dry the mangoes completely (no moisture at all), then cut into small bite-size pieces.
  2. Coarsely crush the mustard, fennel, and fenugreek seeds — this releases all that lovely aroma
  3. Mix mango pieces with all the spices and salt in a big bowl.
  4. Heat mustard oil just until it starts smoking, then let it cool slightly. Pour this oil over the spiced mango mix.
  5. Stir everything well and transfer to a clean, dry glass jar.
  6. Leave the jar in sunlight for 4–5 days, stirring once daily. After that, it’s ready to eat and store.
My little habit: I label my jar with the date I made it, so I know exactly how old (and how tasty) it’s getting.

Shelf Life:

  • At room temperature: 6 months or longer

Storage Tips:

  • Always use a glass jar with an airtight lid
  • Make sure there is a layer of oil floating on top it seals the pickle from air
  • Store in a cool, dry place away from moisture
